This Mountain Man Breakfast is a favorite of mine and I’d dare say of many who’ve ever had to cook for a large family or a big group. It’s really simple to make and everyone I’ve had the privilege to cook it for, just absolutely love it too! That’s always our ultimate goal, right?

What is so great about this recipe is that it is a pot meal. Everything cooks together in your Cast-Iron Dutch Oven.

Things You Will Need:

12 inch/ 6 quart Dutch Oven

Lid Lifter

Heat Resistant Gloves

A Charcoal Chimney Starter Is helpful in starting charcoal

A good Quality Charcoal (I use Kingsford brand) or firewood if cooking on open fire-pit



1 pound ground sausage.

1 pound bacon.

1 medium to large onion chopped.

Chopped bell pepper *optional *.

1 dozen eggs.

2 pounds frozen hash browns.

2-3 cups grated cheddar cheese.

Preparations: Prep time 10-15 minutes and Cooking time 20-25 minutes. 

Place your 12 inch Dutch Oven over a bed of hot charcoal or firewood.

Fry sausage first and crumble up.

Remove the cooked sausage and drain on paper towels.

Fry bacon and remove but do not drain remaining grease from the pot.

Next, saute onions and bell pepper in remaining bacon grease.

Add hash browns to the onions and let them brown.

Add cooked sausage and crumbled-up bacon over hash browns.

Next, add your eggs.

Place the Dutch oven over about 8 coals and place about 16 coals on top.

Let cook for about 20 to 25 minutes, until the eggs are cooked or set.

Remove the lid with your lid-lifter (be careful to not get charcoal ash in food).

Sprinkle cheese on top of eggs.

Cover and let cook another 3-5 minutes until cheese is melted.

Remove lid and serve.

Serves 6-8
